After yesterday's Winter Chicken Casserole, we wanted to share with you are frugal tip on the leftovers. We always like using leftovers, there is nothing more satisfying than making a new dish from an old one. It is a rewarding and satisfying experience and saves pennies, pounds and more importantly stops uneaten food from being thrown in the bin.
MOMMA CAT'S CREAMY CHICKEN & VEGETABLE SOUP
Winter Chicken Casserole
1/4 pint of milk
3/4 pint of chicken stock cube
1/2 a cup of milk
Plain flour x 2 tablespoons
Shred all the chicken that is still on the bone and break up the potatoes on the back of a fork. This will allow some of the starch to thicken up the soup. Put this mixture into a pan and add 3/4 pint of a chicken stock cube and 1/4 pint of milk. Mix the plain flour into a half a cup of milk and add to the soup. Heat up until everything is cooked through.
Remember to keep the bones and freeze them. When you have enough chicken bones you can make some stock from them and have another meal.
