Homemade Peri Peri Sauce

We love spice the hotter the better.  To this end we grow lots of chillies in our garden. As well as drying them, freezing them and bottling them we are always looking for new ways to preserve them in the heat of the season.

This recipe for Peri Peri sauce is a great, inexpensive and quick way to make your hot little fireballs into something very special and absolutely delicious.

Homemade Peri Peri Sauce

You will need:
2-6 Birds-eye red chillis dried or fresh
(adjust spice level to your taste....2 will be mildly spicy whilst 6 will be very spicy)
1 Large red pepper
juice of one lemon
2 tbsp Paprika powder
2 tsp Salt
1 tbsp Mixed herbs
1/2 tsp Red chilli powder
100ml Oil (vegetable or olive)
5 Cloves of garlic
4 tbsp Malt vinegar
1 tsp Black pepper

1 tbsp Tumeric

How to make it:
Put all the ingredients in a blender and blend until smooth  (30 secs - 1 minute). 

This sauce will keep well in a jar or bottle in the fridge for about 2 weeks, lovely as a marinade or as a dip.
